In the spring of 1980 the Department of Defense asked the
Agricultural Research Center in Beltsville to study whether diluting
ground beef with soybeans would reduce the capability of our boys
overseas to absorb oxygen in their blood. The Center devised a series
experiments in which selected families would be given $1000 and all the
ground beef (plus soy protein and other exotic additives) they could
eat for 6 months in return for an agreement to (a) turn over their blood
for analysis and (b) eat all the hamburger they could eat (15+ meals
per week) for 6 months.
Our family was in the group that got ground beef and soy
protein with tin added and flavor removed. The test results proved
conclusively that some people will do anything for money.
In the process we came up with a large number of recipes
for hamburger. Here they are.
